Confit de canard is a traditional French method of preparing marinated duck. This tasty dish is no fast food and to achieve the authentic taste you should leave the meat in the marinade for at least a day and a half. Cook it slowly at low heat, allowing the duck to fully absorb the rich flavors of marinade's ingredients. Meat cooked this way can be stored in its own fat and consumed later.
You will need:
2 duck legs
2 cloves of garlic
1/2 teaspoon of thyme leaves
1/4 teaspoon of rosemary
1/4 teaspoon of black pepper
1/2 teaspoon of bay leaves
250g of duck fat
Optionally, if you'd like to store the meat for later, you would also need another 250g of duck fat.
Mix the spices and cover the duck. You might also pierce it with a fork and fill with spices for more flavor. Leave in the refrigerator for 48 to 72 hours. Remove from the fridge and clean the excess spices. Put in a baking tray, cover with fat and place into a preheated oven at 105 C. Cook for approximately four hours until it turns golden brown. Serve with baked potatoes or vegetables. If you prefer to preserve the meal for later put it in a container, cover with the remaining fat, and leave in the refrigerator. When you want to serve it just remove the excess fat and reheat.
