I love to eat . I enjoy it even more when it's healthy and tasty. I cooked something nice. This won't be a collection of recipes, but maybe it will inspire you to cook something vegan. I can tell you I liked it.
First a mixed salad with tomatoes, endive salad. Nut salad, various sprouts and pieces of avocado in an Italian salad dressing.

A bean salad with chopped onions.
Omelettes with oat milk and lupine flour (egg substitute) and wholemeal spelled flour create a fine dough. Which is then fried until crispy.


Shiitake mushrooms fried with onions, deglazed with white wine and refined with soy cream are the perfect filling.



Fennel pieces fried in a pan and lightly seasoned are a good addition.
