Let's have some creamy ube maja blanca for snacks and dessert this time. This is one of my family's favorite desserts.
"Maja Blanca" is one of the Philippines' popular classic desserts. It is commonly made of coconut milk, cornstarch, corn, and condensed milk. It is also often called "coconut pudding". There are various ways and some additional ingredients in making or cooking maja blanca nowadays. And here's mine. Let's take a look at how I made it.

INGREDIENTS:
- 4 cups fresh coconut milk
- 1 cup cornstarch
- 1 can Evaporated Milk
- 1 can Condensed Milk "ube flavor"
- 1/8 cup Condensed Milk "natural flavor"
- 1/2 cup All-Purpose Creamer
- 1 tbsp Butter
- 1/2 cup Grated Cheese
- 1 can "Whole Corn"
- 1 can "Cream Corn"
- 1 tbsp Vanilla Essence
PREPARATION/ COOKING:
Mix 4 cups of water with the coconut meat. Squeeze the coconut meat thoroughly and extract the coconut milk. Strain it well and then put the coconut milk into a bowl.
In another bowl, mix 1 cup of cornstarch and 1 can of evaporated milk, or you can also use fresh milk. Stir and mix them well by using a whisk or fork. Then set aside.
Let's start cooking.
Heat the pan or cooker and then melt 1 tbsp of butter. Once melted, turn off the heat and then transfer it into a small bowl and set aside.
Pour in the 4 cups of extracted coconut milk into a pan, a cooker, or a pot, whichever you like to use. Then put it on the heat again and bring it to a simmer for a few minutes while stirring.

Then add the ube-flavored condensed milk, continue stirring for another few minutes, and then add the whole corn kernels and the creamed corn. Continue stirring and mix them well.

Add the cornstarch and evaporated milk mixture and the creamer. Continue stirring until it thickens a bit. Add just 1/8 cup of condensed milk "natural flavor" (Some uses sugar in it, but I used milk instead of sugar, but this is optional.)

Add some grated cheese to balance the sweet flavor and also add 1 tbsp of vanilla extract to enhance the flavor and aroma. Continue stirring until you achieve the desired texture and consistency. I love it soft and creamy, with a subtle taste. And I'm glad that I achieved it.
So, there it is. I transferred it into a mold, which I had already brushed some melted butter into. Then I garnished or topped it with grated cheese.
I also have these two plastic boxes and gave them to our godchildren (or inaanak sa kasal) and the other one to our friend.

That was a great and happy family bonding again over some sweet treats yesterday (Sunday). I always make sure to make a little special treat or dish every weekend because my daughter has more free time to bond with us than on weekdays.
