One of my favorite restaurants here in our place is Max's Restaurant. My family loves to eat there when we're going out. They have a wide variety of delicious dishes on their menu, as well as some tempting pastries.
One of my family's favorites is their crispy fried chicken. That is why I tried my best to copy even just a little bit of Max's fried chicken. I'm delighted that my family loves the way I cooked it. And I'd love to share it with you here, too.
So, here's how I did it.
My Version of Max's Crispy Fried Chicken with Potato Fries
INGREDIENTS:
- Chicken Thigh
- Potatoes
- Onion
- Garlic
- Lemon Grass
- Bay Leaf
- Lemon
- Ginger
- Garlic Powder
- Ground Black Pepper
- Paprika
- Knorr Chicken Cube
- Magic Sarap Seasoning
- Salt
- Soy Sauce
- Knorr Liquid Seasoning
- Canola Oil
- Water
PREPARATION:
Wash the chicken thoroughly. And then marinate it with a little soy sauce, a pinch of salt, lemon juice, garlic powder, paprika, and ground black pepper. Then set aside for 2 hrs. (Much better if overnight)
Wash and peel the onion, and then cut it. Crush and peel garlic and cut into smaller pieces.
Wash and peel the ginger, and just slightly crush it.
Wash the lemon grass and tie it into a knot.
Wash and peel the potatoes, and then cut them into bigger strips. Rub some salt and garlic powder into the sliced potatoes. Just a little amount of salt only.
Set them all aside with the rest of the ingredients.
COOKING TIME:
Boil some water in a pot or cooker. Add some spices like onions, just a little ginger, lemon grass, bay leaf, garlic, and green chili.

When the water boils, add the marinated chicken and sauce. I added a little soy sauce, Knorr chicken cube, and Knorr liquid seasoning. Boil and cook the chicken for just 15 to 20 minutes at low heat.
Then remove the chicken from the boiling water and transfer them to a plate, and let them dry. (I kept and refrigerated the chicken stock for my next dish.)
Rub a little amount of salt to the chicken and set them aside until it becomes a bit dry.
While waiting for the chicken to dry up, let's cook the potatoes.
Heat some canola oil in a pan and then fry the potatoes. When they're cooked enough, transfer them to a container lined with paper towels to remove the excess oil.
In the same pan, with the remaining oil, add more oil and fry the chicken at a low heat until all are finished. Transfer them to a plate and set aside.
Let the cooking oil cool for about 20 minutes, then reheat it and fry the chicken again. This process makes the chicken crispier and crunchier on the outside, while retaining its juiciness inside.

And there it is, my version of crispy fried chicken ala Max's with potato fries and dipping sauce.
My family really loves it, especially my husband, because he keeps on saying... โHmmm yummy!โ And we just laughed at him...heheh
