Jollof rice has always been more than just food in my life. Growing up, it was the meal that made every gathering feel special. Birthdays, weddings, anniversaries,holidays,you name it, jollof was there on the table, stealing the show with its rich aroma and bright color. I still remember as a child, standing in the kitchen watching my mother stir the pot while the steam fogged up her face.
