How I made my deliciuse meal today
INGREDIENTS:
Ingredients: What goes inside my Banga soup?
1) Beef: I used beef in this recipe, but you can use an assortment of meat of your choice, like tripe, cow leg, or any other beef part of your choice.
2)Onion: An essential aromatic that boosts the flavor of the beans. You can use any variety – white, yellow, or red.
3)Cameroon Pepper: This is used to add a bit of heat to the soup. You can use cayenne pepper or red chili flakes if you don't have Cameroon pepper and if you want less heat, just skip it.
4)Seafood: Fresh Shrimp, crayfish, catfish, stockfish (dried cod), dry fish, and periwinkles. These are some seafood options that you can use. However, in this recipe, I used crayfish, stockfish, and dried fish.
5)Habanero or scotch bonnet: Either will work
6)Palm-nut fruit concentrate: I used the canned version. However, you can use the fresh palm nut fruit if you have access to it.
7)Banga spice: A mixture blend of Ataiko and Irugeje in a dry mill. Readily available in African stores.
8)Banga spice leaves(Beletete leaves): You can substitute with dried basil, bitter leaf, or dried scent leaves
9)Oburunbebe stick: You can get this from African stores
10)Dried Fish: washed and soaked in hot water.
11)Salt: Add salt and seasoning powder or seasoning cubes to taste.
12) Water/stock: The palm nut concentrate is quite thick, water is needed to loosen it up a bit. I also added the recovered beef stock to boost the taste of the soup. If you don't have any stock you can add a little more seasoning powder (stock cube).
Or in Nigeria; Kanda, azu fridge (horse), crayfish, bonga fish, stock and dried fish, fresh pepper, onion, Ogiri okpei, ugu, scent leaf, salt, ofeakwu spices; control onions, ehu, omni, jansa African nutmeg, orima, dried uziza seed.
It's simple...just make sure you extract a thick palm fruit juice...if it's watery, you need to cook it till it thickens a bit before adding your ingredients.
Depending on how thick your palm fruit juice is, you can decide to either cook your meat seperate or cook it together with your palm fruit juice. Don't forget your stock and dried fish.
Once your soup is thick a little, add your ice fish because that one doesn't take too long to cook, then add the mixture of grounded pepper, onion, okpei and crayfish, salt, ofeakwu spices.
Remember not to cover the pot else you will be loosing your juice as it boils.
Once you are satisfied with the taste and everything, add your vegetables and put down.
