Good morning my foodie friends! I hope you’re all staying healthy and practicing safe distancing!
Since we have our daughter and grandson with us we’ve been extra cautious about venturing to the market. We’ve been wearing our masks along with trying a new curbside pickup service which has proven to be pretty simple. I just select a date and time along with everything I want online.
We’ve had just a few minor bumps…
In fact just last week; I ordered 3 bunches of organic bananas and when I arrived home I found I received 3 bananas. My daughter thought I had misunderstood the quantity of “per bunch to be mean each” so this week I ordered 9….and arrived home with surprise! 9 Bunches of Bananas! That’s a lot of bananas! Oh and of course, they’re all ripening at exactly the same time!
Our sweet baby bird…
is up with the crack of dawn! No sleeping in for us, we’re up and ready to fly with the first early chirps. Breakfast is first on the list and since we have a healthy quantity of bananas on hand this Bird will be getting creative. With bananas stashed in the freezer to be used making banana muffins, breads and smoothies we still have a lot on hand! This morning we’ll be making Banana Pancakes using only 3 ingredients; 1 ½ bananas, 2 eggs and 1/8 teaspoon baking soda! Mash the bananas and combine with the eggs and soda.
Of course you may…
want to toss in a few blueberries or dark chocolate chips if you wish. No added sugar!
2 tablespoons of batter will do…
when making each toddler size pancakes! Grilled until golden brown.
Photo sessions will never be the same…
as he grabbed his fork and chirped “Pan cakes, Mina! Pan cakes!” Needless to say it was a very quick photo session.

More please! Can you believe it, he ate 8 pancakes! Between the sliced bananas, blackberries and visiting Seahorse, breakfast was a hit.
Don't worry, we're not going bananas. Loved this breakfast experiment, so happy it worked! You don’t need flours to make a fluffy tasty pancake! Getting creative in the kitchen can often provide healthy meals using just what you have on hand. With loads of bananas on hand this week I’m sure I’ll be experimenting more.
