AN AMAZING FirePit Pot Roast!
For me, there's nothing like a Pot Roast for comfort foods! AND, who doesn't love cooking over an open fire, for a good, hearty meal? I combined the two recently, and used my firepit, and some of my home grown, fresh garden goodies to make a Cast Iron Pot Roast!

I grow my own onion, garlic, potato, carrot and celery. So, why not combine them, and make a fantastic fire pit cast iron pot roast?
First, I seasoned my new cast iron pot, with deep baked cooking oils. Then, it's a big roaring fire over natural hardwood coals, to get everything good and hot. Then, I seared the roast as hot as could be, then, moved coals around to get a nice, lower even temperature fire. After some baking in the pot, I added a big foil pocket of some seasoned veggies, and cooked them as well, on the coals.
My gardens are in Zone 7a/7b New England.
