¡Hola amigos, feliz día e inicio de mes! Espero que se encuentren bien y que esta semana la hayan iniciado de la mejor manera. Por mi parte, me encuentro bastante bien gracias a Dios, iniciando la semana de la manera en que más me gusta, cocinando. Les cuento que el día de hoy quise jugar un poco con los sabores, no sé si solo me pasa a mí pero hay días donde me provoca una combinación entre lo dulce y salado, o a veces, entre lo dulce y lo picante. Pero esta vez, me fui por la primera opción y aprovechando que en clase me habían pedido comprar ricotta para un taller y justo me sobró pues quise darle una segunda oportunidad y usarla para preparar un relleno delicioso.
Tenía tiempo que no preparaba crepes y sinceramente no me acordaba mucho de la receta pero al final me apoyé con una receta en internet y me gustó bastante el resultado, aunque hubiese preferido que quedaran un poco más delgados, pero igual, no fue impedimento para disfrutarlos. Por cierto, si no llegan a conseguir el queso ricotta, pueden reemplazarlo con queso mozzarella y sin duda es una combinación igual de rica. As for me, I am doing quite well, thank God, starting the week the way I like best: cooking. I wanted to tell you that today I decided to play around with flavors a bit. I don't know if it's just me, but there are days when I crave a combination of sweet and savory, or sometimes sweet and spicy. But this time, I went for the first option and taking advantage of the fact that I had been asked to buy ricotta for a workshop in class and I had some left over, so I wanted to give it a second chance and use it to make a delicious filling. It had been a while since I had made crepes, and honestly, I didn't remember the recipe very well, but in the end, I found a recipe online and was quite pleased with the result, although I would have preferred them to be a little thinner. Still, that didn't stop me from enjoying them. By the way, if you can't find ricotta cheese, you can replace it with mozzarella cheese, which is just as delicious. Preparación
Paso 1️⃣ Lo primero que hice fue preparar el relleno de los crepes, para esto en un bol añadí dos cucharadas de queso ricotta junto con una cucharada de queso parmesano, luego, sofreí un poco de espinaca con un diente de ajo finamente picado y lo añadí al bol, salpimente al gusto y por último (este paso es opcional) añadí un chorrito de miel para darle un ligero toque dulce, mezclé todo muy bien y reservé.Preparation
Step 1️⃣ The first thing I did was prepare the filling for the crepes. To do this, I added two tablespoons of ricotta cheese and one tablespoon of Parmesan cheese to a bowl. then sautéed some spinach with a finely chopped clove of garlic and added it to the bowl. I seasoned it with salt and pepper to taste and finally (this step is optional) added a drizzle of honey to give it a slight sweet touch. I mixed everything together well and set it aside.


Finally, to add a sweet contrast to the savory flavor of the crepe and, of course, to play with the colors on the plate, I used some blackberry jam that I had ready in the fridge. I used it as a decoration and also to spread on the crepes. I also added a few more spinach leaves to give it a touch of green and the ever-present Parmesan cheese. I really liked the result.
