Hi Hivers! It's another amazing day to enjoy a perfect soup and fried shrimp, perfect for cool, rainy weather. Here is another recipe to enjoy.
I have craved this recipe for a while and we finally decided to cook it. Mama cooks this best. She has a great talent for cooking. Although her recipes are simple yet they're delicious. It's made with love. It's one of my favorites. I guess Filipinos' favorite. It has a sour taste blend with a slimy and clear texture. No one cannot not love this.
Prepare all the ingredients. They are the following: shrimp water spinach radish eggplant lemon grass string beans bell pepper ginger salt ground pepper Tamarind powder (sampalok mix)
First off, cut the sharp part off the shrimp's head and wash the shrimps thoroughly with water. I set aside some to fry.
Wash the water spinach, eggplant, string beans, radish, and bell pepper under running water. Cut the top part of the water spinach stalks. Soak them in water with one teaspoon of baking soda for three minutes.
Wash all the other ingredients as well.
After three minutes of soaking the vegetables in water with baking soda, slice the vegetables-eggplant, string beans and radish.
Slice the onions, bell pepper, and pound the ginger. Twist the lemongrass leaf and tie it so it won’t fall apart when mixed into the water. Place water up to half of the big pot and put the mentioned ingredients in the pot altogether.
This is the tamarind mix added to the soup. It would have been beneficial to include the actual tamarind fruit, but it is now rarely available.
After the soup boils with the first set of vegetables, add the shrimp and boil them. Add the tamarind mix, salt and spices to taste. Then add the vegetables: eggplant, radish, string beans, and water spinach. Bring to a boil.
And there you go. It's done.
While cooking sinigang, I also cooked fried shrimp on the other stove to save time and avoid wasting it.
Time to eat! We love sharing these with rice. It’s truly wonderful to cook for the family. It brings joy to see them enjoy simple yet delicious food—shared together at one table, lovingly prepared.
Thank you for reading, everyone. I hope you are all healthy.
