Beetroot sour borscht soup

I am a big fan of sour soups. I have a knack for making one of the best ones by combining all sorts of ingredients. This sour soup reminds me of my childhood and I strongly remember how I was fascinated by the pink reddish colour of it while I was viciously slurping it.

There is the classical recipe of ukrainian borscht recipe and this is a variation of it. Lentils are optional, I often add them in any soup as I like their taste and their benefits.

Borscht is a liquid obtained from the fermentation of the wheat brans in water. In the countryside people use water from their own wells. It is sour, tasty and packed with a lot of vitamins B. Borscht is an excellent source of vitamin B12 and if you have a good stomach I recommend you drinking a small glass of it every morning.

Back to the recipe. This is very simple. Here are the ingredients that you will need:

1 parsnip
1 red onion
4 carrots
1 potato
2 beetroots
fresh lovage
1 liter of borscht
lentils (optional)
salt
pepper

You first start by putting the 1 liter of borscht to boil. Meanwhile you chop the veggies . You add the veggies in the borscht and then cover them with aprox. 2-3 liters of water. You let it simmer for 1-2 hours maximum until all veggies are done. I personally add lentils and leave them to boil for 15 minutes.

At the end you chop fresh lovage and add salt and pepper. We usually eat this soup with polenta rather than bread and you can also add sour cream ( as you can see in the pictures the soup looks more colourful after you add sour cream).

Soups are simple and quick to do. And I always like the ones which bring back childhood memories to me.
