This morning I am thrilled to present to you something special the Banana Ragi Mini Cakes that I prepared in an appe maker. Since the morning I have been craving something sweet. But as a diabetic I canโt have anything which has sugar and refined flour (maida) in it. Thatโs the reason I went for a healthier option. This cake which is made with ragi flour and bananas is not only health conscious but also very delicious. Ragi flour is a great choice for people with diabetes and the bananas add natural sweetness. I made mini cakes which came out fluffy and mouthwatering.

3 ripe bananas
1 cup ragi flour
1 cup jaggery (grated )
1 cup semolina
1/2cup oil
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon powder
A pinch of salt
2 tsp sesame seeds
5โ6 walnuts (chopped)

In a separate bowl, mix the ragi flour, semolina, baking powder, baking soda, cinnamon powder, and salt.
Combine the dry and wet mixtures, then fold in the walnuts and sesame seeds.
If the batter seems too thick, add a little milk or water.
Place a tawa on the gas stove and preheat it. Grease the cavities with a bit of oil. Pour the batter into the cavities, cover with a lid, and cook on low flame for about 10 minutes. Flip the cakes and cook for another 5 minutes until golden brown.
Once both sides are cooked evenly, your adorable and healthy mini cakes are ready.
