Today we decided to cook a delicious fish lunch in the air fryer, with rice, plantains with cheese, and salad. Super fresh and healthy for our lunch
Ingredients:
For the Fish:
- 5 fish fillets (it can be hake, tilapia, or any white fish of your choice)
- 3 garlic cloves, finely chopped
- 3 tablespoons of olive oil
- 1 teaspoon of ground black pepper, or to taste
- 2 tablespoons of melted butter
For the Rice:
- 1 cup of white rice
- 2 cups of water
- A pinch of salt
For the Salad:
- 1 Romaine lettuce, washed and chopped into small pieces
- 2 medium tomatoes, diced
- 1 large avocado, diced
- 1/4 carrot, grated
- Green onions to taste
- Juice of 1 lemon
- Salt to taste
- 2 tablespoons of olive oil
For the Plantains with Cheese:
- 2 ripe plantains
- Fresh cheese (or any cheese of your choice), sliced
Instructions:
Preparing the Fish:- Make the mixture: In a small bowl, combine the chopped garlic, olive oil, ground black pepper, and melted butter. Mix well until the ingredients are fully incorporated.
- Marinate the fish: Place the fish fillets on a plate and brush them with the garlic and butter mixture. Make sure they are well-coated. Let them marinate for at least 15-20 minutes to allow the flavors to soak into the fish.
- Cook in the air fryer: Preheat the air fryer to 180°C (350°F) for about 5 minutes. Place the fish fillets in the air fryer basket and cook for 10-15 minutes, or until the fish is golden and fully cooked. The time may vary depending on the thickness of the fillets.



- Rinse the rice: Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.
- Cook the rice: In a medium saucepan, bring 2 cups of water to a boil. Add a pinch of salt, then the rice. Lower the heat, cover the pot, and cook for about 18-20 minutes, or until the water has been absorbed and the rice is tender.
- Combine ingredients: In a large bowl, mix the lettuce, tomatoes, avocado, grated carrot, and green onions.
- Dressing: In a small bowl, combine the lemon juice, a pinch of salt, and the olive oil. Pour this dressing over the salad just before serving and toss well so that the ingredients are evenly coated.



- Bake the plantains: Preheat the air fryer to 180°C (350°F). Peel the plantains and slice them lengthwise in half. Place the plantain halves in the air fryer basket and bake for 10 minutes.
- Add the cheese: Take the plantains out of the air fryer and place a slice of cheese between the halves. Return the plantains to the air fryer and bake for an additional 5 minutes, or until the cheese is melted and the plantains are fully cooked and golden.



Serving
- Serve the fish: Place a fish fillet on each plate.
- Add the sides: Serve a portion of rice alongside the fish.
- Fresh salad: Add a generous portion of fresh salad to each plate.
