It is the start of a new week and I hope you had a refreshing and relaxing weekend. As we start this new week let's take some moment to reflect on how fast the year is running out and to encourage ourselves to keep pushing hard towards achieving all our set goals, be it short term or long term goals. Bear in mind that challenges may come but don't let them stop you from showing up at your best. In the end, when you look back it will be worth the time and energy.
In this post I will be sharing with you my experience at the market when I stopped by to get some smoked fish but I ended up with an homemade oven-grilled fish. Some weeks back, on a Sunday, i decided to go to the market after service to buy some smoked fish that will be used to cook rice. On getting to my fish vendor he said he had run out of smoked fish and he's got only frozen fish available. I was disappointed because I had been imagining the taste of smoked fish in my food throughout the service. I liked his fish more than the ones other people sell so I didn't bother to go look for another vendor.
So, I asked him to give me the frozen one and he handed me some horse mackerel that is popularly called kote in Nigeria. The price of the fish varied from ₦3,000 ($2.00) to ₦4,500 ($3.00) depending on the size. I was able to negotiate the one he said was ₦4,000 (~$2.67 USD) to ₦3,500 (~$2.33 USD) after a bit of back-and-forth. The fish was quite big and I feel like it was not a bad deal at all.
As soon as I got home, I relaxed for some minutes before I switched to cooking mode. I started off by washing the fish thoroughly several times to ensure it was clean and doesn't have any blood or slimy. Once I was done with the washing I seasoned it with some dry ground pepper, seasoning cubes, curry powder and salt. I made sure every part of the fish was patted with the mix.
After seasoning I placed it on an oven tray and took it to the oven where I grilled it for about 25 minutes. I discovered my aluminium foil paper has finished so I had to place some neat paper on the tray before placing the fish. Once it was done I brought it out, deboned it and used it to prepare some rice. It did served the same purpose of the firewood smoked fish that I initially wanted to buy in the market.
I hope this inspire you in some way. Even if it is not related to cooking, it could be any aspect of life where you don't seem to get what you want, you can create something from what you have. As the oyinbo people will say "When life gives you lemons, make lemonade"
