In this post I will be sharing with you how to make Nigerian Okra soup which can be simply described as okra in stew. It is a sumptuous and mouthwatering soup that is popular in Nigeria even though there are different names and different ways it is cooked. Just as the methods of cooking varies, the ingredients also varies. In fact we have a type that is called sea food okra because it is prepared with varieties of sea food like fish, snail, crabs, shrimps and lots.
Speaking in terms of varieties, some people cook theirs without palm oil (maybe based on health reasons) but I love palm oil in my soup. There are some who opt for vegetables of their choice ranging from ugu leaves, spinach, oziza leaves, utazi and so on.
Ingredients
- Okra

-
Palm oil

-
Fish
-
Locust beans

-
Crayfish

-
Scotch bonnet

-
Onions

- Ponmo

- Seasoning cubes

- Salt
Step by Step
- Wash your okra until it is clean and grate about half of it and use a knife to slice the remaining half.
- The grating and slicing of the okra is just to give your soup a sumptuous taste and look. The sliced one will make your soup have a crunchy feel while the grated one on the other hand will make your soup slimy/draw.
- Set it aside when you are done and continue by washing your scotch bonnet and onions. Place them in your blender and blend with some crayfish and locust beans also known as iru or dawadawa.
- Next, clean your fish, beef, snail, cow tripe, ponmo (cow skin) and any other protein you will be needing for your soup. Set it aside.
- Next, place your pot on medium heat and add tge pepper mix that you have blended earlier, add your fish and let it cook .


- Season it by adding your salt, seasoning cubes and other spices.

Next, add some palm oil and allow to boil for about five minutes before you toss in the sliced and grated okra.

Next, add your chopped ugu leaves and allow jt to simmer for about 60 seconds on medium heat.


- Your soup is ready.
