HOW TO MAKE CLASSIC HOMEMADE NIGERIAN FRIED RICE AT HOME

In this post I will be sharing with you how I made some homemade fried rice for my family. Fried rice is a classic meal in Nigeria that stand side by side with Nigerian Jollof rice in the hierarchy of food in Nigeria. To further proof the rivalry that exist between the two types of rice they are often served together at events or restaurants.

This recipe I want to share with you can help you create a pot of exquisite jollof rice for you and your family. So, sit back and carefully read the process that I will be sharing below.

Ingredients 

  • 5 cups of rice

  • 1 big red bell pepper

  • 1 big green bell pepper

  • 1 big yellow bell pepper

  • Blended scotch bonnet peppers
  • 4 carrots

  • 2 -3 ginger

  • 5 - 8 green beans

  • 1 medium sized onion

  • Beef

  • Liver

  • Meat stock

  • Vegetable oil

  • Seasoning cubes

  • Thyme
  • Curry
  • Salt

Step by Step - We shall begin by prepping all our ingredients. This is important if you want your fried rice to come out well because all ingredients go in one after the other. If you don't prep all that means you have to pause at the middle of the cooking which may ruin your meal. - So, wash your red, green and yellow bell peppers and slice into long tiny strips.

  • Next, wash your onions and slice into small sizes.

  • Next, wash your carrots and slice into long strips. Then cut your green beans too.

  • Next, wash, peel and grate your ginger.

  • Next, wash and boil your beef and liver. Then fry it afterwards. Set aside the meat stock. You will need it lateron.

  • Then, wash your rice thoroughly and place in a sieve to drain. We don't need too much water from it at the initial stage.

  • Now that all the prepping is done. Place a pot on medium heat, add some vegetable oil and leave it to heat up.

  • Next, add some of the sliced onions (you will need the rest later), toss in some garlic as well and sauté for like a minute.

  • Next, add your rice to the pot and fry it continuously for about 3 minutes. Stir it at intervals so that it doesn't burn.

  • When you notice it is beginning to have a shiny look add more onions, meat stock and blended scotch bonnet peppers.

  • If needed add some water at this point.

  • Now, add your seasoning cubes, curry, thyme, fried rice spice, and salt.

  • Now, cover the pot and allow to cook on medium heat until it is soft.

  • In a separate pan or pot, pour some vegetable, add the remaining onions and sauté for about a minute.

  • Now start adding your thinly sliced green bell pepper, yellow bell pepper, and red bell pepper one after the other.
  • Next, add your green beans and finally toss in your carrots last to retain its crunchiness.
  • Stir-fry all until it is done and put off the heat.

  • Check the rice and when it is done divide into two so that it will be easy for you to mix the stir-fried red, green and yellow bell peppers, carrots, and green beans with it.

  • I cooked the rice in large quantities, so some of it will be stored in the fridge for later.

  • Serve and Enjoy.

  • I paired it with some coleslaw made from cabbage, carrots and mayonnaise.
