In this post I will be sharing how to make plantain and eggs frittata. If you are like me and you love plantain with passion can you indicate in the comment section? Let's meet ourselves. Maybe we can call ourselves Distinguished Members of Plantain Lovers Association (DMPLA). Haha.

Whether fried (dodo), boiled, roasted (bole) or used for porridge, plantain is that one food that will always hit the spot at all times. Plantain is seeasonal and it is readily accessible at a fairly affordable rate during its season and I make sure to enjoy it to the fullest during the period its surplus in the market.

Plantain and eggs frittata is a combination of ripe plantains, eggs and spicy sauce made from scotch bonnet peppers, tomatoes and onions. You can add extra ingredients like carrots, bell peppers, sausage and so on. This meal is perfect for breakfast or even as a snack. For our mothers who may be looking for ideas of food to prepare for your kids as school is resuming, this is a good one.

Let's begin the process of making this sumptuous meal.

  • 3 eggs
  • 3 scotch bonnet peppers 1000218881.jpg

  • 5 medium tomatoes

  • Vegetable oil

  • 1 seasoning cube
  • Salt to taste

Step by Step - Let's begin by prepping all the ingredients we will be using for this meal. We shall start by peeling the plantain and slicing it into round sizes and set aside. 1000218883.jpg

  • Next, we will rinse and cut the scotch bonnet peppers, tomatoes, and onions into small sizes and set aside. 1000218884.jpg

  • Next, break your eggs into a bowl and whisk. Set aside. 1000218890.jpg

  • Now, in a frying pan add some vegetable oil and fry the sliced plantains until they are golden brown. Set aside. 1000218891.jpg

  • In the same pan, you may reduce your vegetable oil at this point if it is too much. Add the chopped onions and let it saute for about a minute. 1000218892.jpg

  • Next, add the sliced tomatoes and scotch bonnet. 1000218893.jpg

  • Add seasoning cubes and some salt. Then mix together and let it cook until it is done. Set aside. 1000218894.jpg

  • In a bowl, add the whisked eggs, the sauce and the fried plantain and mix together thoroughly. 1000218895.jpg

  • Now, on a low heat place your frying pan and add little or no oil, pour the mixture into the pan and spread it evenly to allow the plantain sit properly. 1000218896.jpg

  • Using a lid cover the pan and allow it cook until the eggs is done. This must be on a very low heat so that it won't burn.
