In this post I will be sharing with you how to make porridge with sweet potatoes. Sweet potatoes is that one tuber that reminds me of childhood when we plant them in our house and we can eat as much as we want in different variant. I can recall we do more of adding it to beans or using it as porridge. These two ways of cooking sweet potatoes can be very delicious. We often roast them using firewood too.
However, lately I have observed that sweet potatoes is not as 'sweet' as it used to be in those days. Though I was more acquainted to the one that has purple skin. It used to be very sweet and you don't even need extra sweetener but nowadays you often need to add a pinch of salt to your potatoes to be sweet.
Well, let's dive into making some easy quick sweet potatoes porridge which is the main topic of the day.
Ingredients
- Sweet potatoes
- Tomatoes

Scotch bonnet peppers

Onions
- Ugu leaves (fluted pumpkin leaves)

Palm oil

Curry powder
- Thyme
- Crayfish
- Seasoning cubes
- Salt
Step by step
- We will start by peel the sweet potatoes and cut into small pieces that is biteable. Also, it is important to cut to small small sizes so that it can cook fast.
- Next, place a pot on medium heat and add the potatoes into the pot. Add some water enough to cover the top of the potatoes and cook until soft.

While it is cooking, wash and slice your tomatoes, scotch bonnet peppers and onions.

When the sweet potatoes is soft, add the onions, tomatoes and scotch bonnet peppers one after the other.

Then use your spoon to mash about 70% of the sweet potatoes. Depending on your preference you may decide not to mash it at all. Or you may decide on the percentage you want to mash.

Next add your seasoning cubes, curry powder, thyme, and salt to taste into the pot

Then sprinkle in your crayfish for special aroma and taste.

Next, stir all together and allow to cook for about three to five minutes.

Next add your palm oil and allow all to simmer together for few seconds.

Just before turning off the heat add your sliced ugu leaves.

Let it simmer for a minute and turn off the heat.

Your sweet potatoes porridge is ready.
