Hello everyone! Today I would like to write to you about a vegetable specialty that everyone loves. In my homeland it is called Ajvar. It is especially liked by foreigners who try it and immediately express a desire to buy it.Ajvar prepares for two days because he has a lot of work to do, and the neighbors also participate. I will describe to you how I do it, that is, my wife, and I am the auxiliary worker.
As you can see, we cook it in a larger pot because we're saving a little more. We buy good peppers, the meaty ones, because ours from the garden is more for a different kind of winter salad.On the first day, we wash, wipe the vegetables well and bake them. Put the roasted ones in plastic bags to make it easier to remove the skin. After a few hours, when it cools down, the neighbors and we start with the most difficult part of the work. Peel the peppers, remove the seeds and put them in a bowl to drain well. It usually happens overnight.
The next morning, the grinding of vegetables begins. I pour a liter of oil into the pot and heat it well until boiling. I add sugar, which gives a special taste, and immediately pour in the ground peppers and eggplant. I add salt and a little wine vinegar.Then the mixing starts for at least 3 hours.
