Pizza! Pizza! with Market Friday

Welcome to #MarketFriday! So many people have asked for my pizza recipe. Again. Not just any recipe, but, the cauliflower pizza recipe. I know, it wasn't you, just someone who looked like you. Don't judge. I did before I tried it, and there is nothing worse than eating crow. Anyone who knows me, know I love pizza, but this one right here was love at first sight. Just like a forever mate, I have only grown to love it more. This will be the easiest shopping trip ever! Three ingredients to make the crust, plus all the yummy goodness of our toppings.

It's so simple!! Cauliflower, eggs, cheese, and a few select spices. In todays' world, thee are so many people that are gluton intolerant people. Cauliflower Pizza allows you to enjoy a low carb, gluton free treat, mostly made of vegetables. As with this entire recipe, what else you put on it is totally flexible.

I almost never go to a market on #MarketFriday, but today I went to my local Military Commisary where I selected items I would need for this specialty pizza. I know what you are thinking! Cauliflower is that special at all, but guess what? It is very special, especially as I can put this together in minutes!


Cost: Tomatoes $0 They were my own Basil $0 It was my own Cauliflower $1.50 head (I have heard the price went way up today) Mozzarella cheese $7.49 ounces Italian sausage 4.99 16 ounces (I won't use all of that) My total cost for groceries was $14.98

I can make at least 3 pizzas with that

Fresh tomatoes, courtesy of a southern roadtrip, basil from my windowsill, and pepperoni from a stick from Italy, imported sausage. Only the freshest ingredients. The cheese! So fresh, did I forget to mention that? I don't think it would have been fresher if I made it myself. The fresh mozzarella is soft and sometimes too hard to cut, but, it is insanely delicious. The pepperoni - it goes without speaking. Just give it a bonafide taste. The best part is putting it all together and letting those flavors meld. I cut the pepperoni off the stick and wash the basil. I fry up the sausage, taking it out of the casing.

I'll take this moment to gather things from around the kitchen, The cauliflower, two eggs, and the cheese - just for now. I don't grate it too early, otherwise, it gets watery.

### **Recipe for Cauliflower Pizza Crust**
** Ingredients** 2 cups of finely grated cauliflower 2 cups shredded/shaved mozzarella cheese, plus extra for topping 2 large eggs tomato sauce, pizza sauce whatever you use or use a jarred one toppings of your choice (tomato, pepperoni, ham, basil, cheese, spinach
**Equipment Needed** cheese grater parchment paper round pizza pan/ with lip or pizza stone
### **Directions**
Preheat oven to 450 degrees. Cut parchment paper to the size of your pizza pan. If you have a pizza stone, let the oven preheat, then allow the stone to heat for 20 minutes. The stone really makes the crust crispy and delicious. I admit right up front that if you have a pizza stone, use it. It makes it amazing. I have to be honest. I have never done it on a pizza pan. While I am sure it is good as that is how I have seen it made, the pizza stone rules.
Finely grate cauliflower. (2 cups) Remove any large chunks. Make it as thin as possible.

Mix together the cauliflowers, mozzarella cheese (2 cups), and two eggs until they are well combined.

Place the cauliflower mixture in the center of the parchment paper and spread the mixture thinly but evenly. Make a round crust.

Bake crust which is still on the parchment paper at 450 degrees for 15 minutes. Do not cook crust with toppings. The crust must be cooked first. Once baked, take the crust out of the oven, let cool for a moment or three, then put the toppings on. ![Gradient - Green.png](https://files.peakd.com/file/peakd-hive/dswigle/246FZMwteQQMEgT4iDyeTv2vw9QqRZ9UhFG7im6TzvjxJG9Je1D8LFuYrZk8PwdbbPNBm.png) *Note: If you are making it for later or another day, you can freeze it at this point and it will do well.*

Assemble the rest of your toppings. Start with tomato pizza sauce (use less than what you think it needs, you won't be sorry!) and place it in the middle, spread out, nearly to the edges. Too much sauce is usually one of the mistakes. **As an alternate way to do it, take the cooked pizza crust and drizzle olive oil on it, then lightly spread it over the top. (no sauce)This is what it looks like right before you pop it in the oven.

Now, for the toppings! Place some cheese (remember the crust already has cheese) followed by toppings of your choice. Whole fresh basil leaves, pepperoni, mozzarella cheese, sausage, sliced tomatoes, mushrooms, and olives. Or cheese sausage and pepperoni. I prefer no sauce. You won't even miss it!

Return to oven, still, on parchment paper, rebake until the cheese is melted and it begins to turn a golden brown. This is usually accomplished in 10-15 minutes.

I have to be honest. I really wasn't sold on it the first time I was preparing it a while back. It's cauliflower, right? But, after using riced cauliflower in the place of rice in certain dishes, it got a little respect from me and I made an effort to try it. I actually prefer it most of the time. I didn't believe it either! It doesn't make me feel too full, ever. I love pizza, but, I don't like feeling like I overate each time. No matter how many pieces I ate or didn't eat. Try it! It just may surprise you! If you do try it, tag me! I really want to know how many people are up to the challenge!
As an aside, I have never done it with just a round pizza pan because I have the pizza stone. I should try it out at least once, but, I am so spoiled! If you used the round pizza pan, please let me know how it turned out! Thank you in advance!
