**lunch for 2: simple delicious avocado salad **
spring is here and it is again time for some really nice salads. when it comes to avocado, often the best way of serving is the simplest- natural. so today i am preparing a quick to make vibrant scrumptious salad featuring avocado as the keynote.
ingredients 3 ripe avocadoes 1 cucumber some cherry tomatoes 2 ripe tomatoes 1 long red paprika 1 small red onion 1/2 head iceberg lettuce
Dressing 1,5 Tbsp lime juice 3 Tbsp avocado oil 2 tsp sugr 1 tsp salt 1 tsp black pepper
chop all the vegetables keeping them separate
spread the lettuce on a serving platter
make the dressing by mixing the lime juice with the salt pepper and sugar
stir in the avocado oil
arrange the vegetables in straight lines on top of the lettuce with the avocado in the middle and cucumber on the edges and the paprika, onion and tomatoes in between. stir the oil once again and pour evenly over the salad.
serve with some whole grain bread
and it will disappear right before your eyes- into your mouth!
