Every year in this beautiful region of the plains of my state of Portuguesa, thousands of specimens of a fish highly appreciated by the people of the plains arrive, both for its meat and for the economic and social value it represents in the lives of Venezuelans, which allows my father and a group of fishermen to catch them in large quantities, as it provides a protein alternative to nutritional requirements and a way of socialising during the crowds motivated by the ribazon de bocachicos.
The Bocachico is a freshwater fish, its mouth is small and fleshy, hence the origin of its common name.
To take advantage of this food I bring you a way to prepare it fried, it is delicious and very meaty, it has a splendid flavour on the palate, it has a spine and is the most consumed fish in the populations of the rivers and their surroundings.
Ingredientes-Ingredients:
2 bocachicos medianos. Sal al gusto. Aceite para freír. Harina de maíz. Tomates, cebolla, aguacate y cilantro. Mayonesa al gusto.
2 medium bocachicos. Salt to taste. Oil for frying. Corn flour. Tomatoes, onion, avocado and coriander. Mayonnaise to taste.
Preparación-Preparation:
The Bocachico must be scaled, rolled and gutted, that's what my dad took care of before.
Season the fish with salt and cornflour to make it crispier.
Preheat the oil and fry small arepas to accompany the fish.
Then introduce the Bocachico and fry on both sides for approximately 20 minutes.
Prepare a salad to accompany our dish of tomato, onion, avocado, coriander and mayonnaise to taste.
Serve our dish with white rice.
