Easy Warm meal for a cold morning - Fried Plantains and Egg with Beef Steak.

If you've never tried plantain before, please add it to your bucket list of things to do in this lifetime. It's one of God's greatest gift to man, yes, it's that serious Now I say this not only because of the sweetness in its taste but also because similarly to potatoes that can be eaten in lots of ways. Plantain offers such variety as well.

In the state I live, the okrika tribe uses it in a meal called ONUNU - A pounded plantain delicacy that's eaten with fresh fish soup.* That's just one of many ways this food can be enjoyed. Now onto my main post. It's been raining every single day in the city of port Harcourt, rivers state. Going out without one's umbrella, and a thick clothing now borders on foolishness. One other thing that can keep one warm is definitely a hot meal. Now on these days, the older generations will advice on having a pipping hot bowl of peppersoup with either goatmeat or beef. But with all I had In my kitchen, I went a different route on this day. IMG_20250808_142056.jpg

The steps are quite easy. INGREDIENTS USED

1 Yellow scotch bonnet pepper 1 Red scotch bonnet pepper 3 Large Eggs 1 red onion Tomatoes 1 green bell pepper Already diced and fried plantains Beer steak (SUYA) (I used this coz I had it in my fridge already)

COOKING PROCESS Step 1 I fried the onion till it was translucent or 1 to 2 minutes on medium heat. IMG_20250808_142030.jpg

I added in my scotch bonnet pepper. Fried this for an additional 2 minutes. IMG_20250808_142002.jpg I added in my tomatoes. This i fried till the water was dried out. IMG_20250808_141932.jpg

I added in a seasoning cube. I kept the seasoning low because I really wanted the sweetness from the plantain to come through. IMG_20250808_141855.jpg

I then added in my eggs, lightly salted by the way. IMG_20250808_141807.jpg

I let the eggs fry on low heat so as to not let it brown. IMG_20250808_141739.jpg

I throw in my green bell peppers. Still leaving my heat on low. This I let simmer for 1 to 2 minutes. IMG_20250808_141714.jpg IMG_20250808_141430.jpg

Finally, the star of the show. I add in my already fried plantains. IMG_20250808_141353.jpg

Immediately I start to mix all the ingredients together until properly combined or until satisfied. IMG_20250808_141304.jpg

I add in my beef steak or Suya as it's popularly known and turn off my heat after 30 seconds IMG_20250808_141231.jpg

I just let the steam heat up the beef a little bit then IT'S READY IMG_20250808_141211.jpg
