Today i would like to share the recipe of Aloo Tamatar ki Sabji or Potato Tomato curry. There are many variations of making aloo tamatar sabji but 'm making it in quickly and with lots of flavours just by boiling the tomatoes, it's simple curry without the fancy stuff like cream and cashew paste. It is common recipe of India, in my house we have this atleast once a week. It is liked by all age groups people from kids to adults. You can enjoy this recipe with breads - paratha or Roti.

Ingredients📃
• 2 Tomatoes. • 4 boiled Potatoes. • 2 Green Chilli. • 1 inch of ginger. • 2 tbsp of oil. • 1 tbsp of cumin seeds. • Pinch of asafoetida. • 1 tbsp of Kashmiri lal mirch. • 1 litre of water. • Green coriander leaves for Garnish.
Process 👨🏻🍳
In a sauce pan, boil the water, when water start boiling, add the tomatoes, boil it untill it get soft.
strain the water, wash it with cold water, add the tomatoes into the mixing Grinder.
Now add the green chilli & Ginger.
Make a smooth paste, as shown in the picture. Keep it aside.
Heat the oil in the kadai. You can use any cooking oil, i had used Sunflower oil.
Add the cumin seeds & Asafoetida, Wait untill it start crackling.
Now add the red chilli powder on low flame, be careful your red chilli cab burn.
immediately add the tomatoes puree into the kadai, on medium flame let it cook untill it start releasing oil from its sides.
Now add the mashed(Don't over mash it) potatoes, mix it well, so that masala get well combine with potatoes.
Now add the water, on medim flame let it cook untill it get thick in consistency. Consistency of Gravy is depending on your choice. I keep the neither too running nor too Thick.
Garnish it with Green coriander leaves, can be paired up with indian bread like Parathas or Roti, even best with the Jeera rice.
