Crispy Aloo Stuffed Kachoris - North Indian Famous Street Food.

Today i would like to share the recipe of Aloo Stuffed Kachori it is deep fried bread made up of Wheat & all-purpose flour with spicy boiled mashed Potatoes stuffing, it is ideal for breakfast, as it is heavy to consume and take time to digest, when you kachoris in breakfast, better to skip Lunch. It is paired up with Indian green chutney or Tamatar aloo sabji(gravy). aloo ki kachori is a famous indian street food recipe and is particularly popular in my area(uttar pradesh). There are many variations of many kachoris but these aloo kachoris is the one of my favourite, specially liked by kids. Try this recipe, 'm sure you gonna love this indian kachoris.

Ingredients📃


For Making Dough

• 2 cup of wheat(Atta). • 1 cup of All-purpose flour(Maida). • ½ tsp salt. • 1 tbsp of Carom Seeds(ajwain). • 2 tbsp clarified butter(ghee) • ¾ cup water. • oil for deep frying.

For Making Stuffing

• 4 tbsp of Oil. • 4 Mashed Boiled Potatoes. • 2 sliced Onions. • 3-4 Chopped Green Chillies. • 1 tbsp of cumin seeds. • Pinch of Asafoetida. • 1 tbsp of Turmeric Powder. • 1 tbsp of Red Chilli powder. • 1 tbsp of Dried Mango Powder. • 1 tbsp of Kasthuri Methi. • 1 tbsp of Garam Masala. • salt to taste. • Some chopped Green Coriander Leaves.


Process 👨🏻‍🍳


For Making Dough

firstly, prepare the dough by taking maida, atta, ajwainz salt and ghee.

Mix it well, crumble and mix well making sure the dough holds shape.

add water little by little and knead.

knead well till you form a smooth and soft dough, Punch the dough 8-9 times. Keep it rest for atleast 5-7 minutes.

After the resting, once again give it Punch, your final dough look like this, Keep it aside.


For Making Stuffing

Heat the oil in the Kadai/pan, add the cumin seeds & Asafoetida.

Add the sliced onions, saute it untill it get translucent.

on low flame, add the red chilli powder.

now add turmeric powder, then immediately add little water so that your spices will not get burn.

Now add the mashed boiled potatoes, then add kathuri methi, amchur powder & garam masala.

Mix it well, so that spices get well coated with potatoes. Your stuffing is ready now.

your kachori is ready to fry. pinch a small sized ball and flatten it.

Sprinkle some raw atta from the top. with the help of rolling pin, flatten the ball into the circle.

now scoop 2 tsp of prepared aloo stuffing and place in the centre,get the edges together and form a bundle. close the top by pressing and flattening. then again with rolling pin, make a circle not too big. your kachori is ready to fry.

Heat the oil for frying.

when the oil is medium hot, add prepared kachori and fry. Repeat the process with the remaining material.

do not touch it for a minute or till they float. then press with the spoon to puff up, on medium flame, keep fry, don't flip again & again.

flip the Kachoris, Fry it untill it get crispy & light brown in colour.

Serve Crispy aloo stuffed Kachoris with Tamatar aloo sabji or with green Chutney.
