Veg Masala Khichdi - Super delicious & Healthy

Today i would like to share the recipe of Veg Masala Khichdi it is madeup of spicy healthy rice and lentil (green gram or moong bean) with lots of vegetables, coated with aromatic indian spices. It is healthy can be served in the dinner/Lunch. It is delicious in taste, which is paired with fresh curd, green chutney or Pickle anything of your liking. To make it more delicious, pour the tempering on the top which add more flavour and taste. It is easy one pot recipe, as the entire recipe steps are completed within one single pressure cooker. It is liked by all kids to adult, try this recipe, 'm sure you gonna love it.

Ingredients📃


• 1 cup rice. • ½ cup toor dal. • ½ cup moong dal. • 2 tbsp ghee/ Clarified butter. • 1 tbsp cumin seeds. • Pinch of asafoetida. • 1 tbsp of turmeric powder. • 1 tbsp of Red chilli powder. • 1 tbsp of Garam Masala. • 1 chopped onion. • 1 chopped tomato. • 1 chopped carrot. • ½ chopped capsicum. • 4 cups of Water. • salt to taste. • 2 tbsp of chopped Green Coriander.

For Tampering

• 2 tbsp of Desi Ghee. • 1 tbsp of cumin seeds. • 5-6 chopped Garlic cloves. • Pinch of asafoetida. • 1 tbsp of kashmiri Lal Mirch.

Firstly, in a bowl soak 1 cup rice, ½ cup toor dal, and ½ cup moong dal for 10-20 minutes.

Heat the desi Ghee in a pressure cooker.

Add 1 tsp cumin & pinch asafoetida.

add onion, carrot & capsicum and saute till they are cooked well.

now add the chopped tomato & salt, saute it untill it get soft.

Keeping the flame on low, add turmeric, chilli powder, and garam masala. Saute until the spices turn aromatic.

Add in soaked rice and dal. Saute for 1 minute until the rice turns aromatic. be careful to avoid burning of spices.

Pour in 4 cups water or cover the rice level, Mix it well. Cover and pressure cook for three whistles or until the rice and dal are cooked well.

open the pressure cooker, when pressure get settled down.

now add one cup of water, and mix well, adjust the consistency as required.

Heat the desi ghee in tadka pan, keep the flame low, add the cumin seeds & pinch of asafoetida, cloves of garlic and red chilli powder.

Splutter the temperign and pour over the khichidi. Your khichdi is ready to serve, pair it up with fresh curd, salad, papad or green chutney or pickle as per choice & liking.
