Hello hello dear HIVERS and beautiful people who make life in the community of @hivefood 👩🍳 this time I come to share with you a healthy recipe for a sugar-free jelly and full of benefits for our health of which I will tell you at the end of post ♥️ I hope you like it and encourage you to make it.
I prepared this recipe twice, the first for the birthday of my dear @ikigaidesign who is on a strict diet and the second for me, to consume a healthy dessert rich in benefits, although I tell you that I made some small adjustments, the one I made for my friend's birthday I put too many cloves and these provide a super invasive flavor that I did not know would result well, in the second preparation I lowered the dose of this and it was much better.

**The materials I used were:**
* 2 tablespoons of unflavored gelatin.
* 500 ml of water.
* 1/4 cup of water to hydrate the gelatin.
* 5 leaves of Jamaica flower.
* Half cup of stevia concentrate.
* 6 cloves.
* 2 cinnamon sticks (this also gives a quite pronounced flavor you can add only one if you want to feel less cinnamon flavor).

The first thing I did was to put the hibiscus flowers, cinnamon, cloves and half a liter of water in a pot and put it to boil for a few minutes, then cover and let it cool, and so I prepared my main infusion.

Then in a metal cup I put to hydrate the two spoons of unflavored gelatin with 1/4 cup of water, while the gelatin was hydrated, then once this was hydrated my gelatin I put it to melt in a water bath, you can use a glass cup and also melt in microwave, I currently have no microwave and I do it this way, if you do it in microwave be aware not to leave it too long, about 10 or 20 seconds would probably be enough, it depends on the power of the microwave.

At the same time, while I melted the gelatin, I added the stevia concentrate to the infusion I prepared at the beginning to give the sweet touch, and I took approximately half of the liquid and heated it until it was boiling. When the mixture was hot I added the gelatin that I had melted, mixed everything very well and after incorporating the gelatin well I added the rest of the mixture (infusion) that was at room temperature and here I had my mixture ready.

Once the gelatin mixture was ready, I added it in a mold and took it to the refrigerator until it was set, after it was set I unmolded it and it was ready to take to my friend's birthday party.

the second preparation, I put them in 5 ounce cups and I got 4 and a half cups, this size is ideal for a good portion of gelatin and prepared this way it is a very healthy, delicious, refreshing and full of properties dessert that I'm almost going to tell you about.

Before I tell you about the properties of consuming gelatin and the ingredients used, I want to briefly share with you how I prepared my stevia concentrate.
In a pot I put a 10 grams sachet of stevia, a cup of water and boiled it for a few minutes so that all the sweetness of the leaves would come out.

Then I put them through a strainer and squeezed them to remove all the sweet substrate possible, and so I got a super sweet concentrate that helps me sweeten desserts in a healthy way, Stevia is a little bitter if used more than necessary, you have to learn to dose it, this amount comes out almost a cup of concentrate, I used half of it, the rest I used for another dessert that I already shared with you.

**Benefits of this dessert:**
**Gelatin:** Probably at this stage of the game and with so much information that we consume daily on social networks for almost no one is a secret that gelatin is a great source of collagen, **collagen** fulfills super important functions for our body and it is super recommended to consume it especially after certain ages or if we are athletes.
Collagen helps us to strengthen joints, improve skin health, hair among other things, it is like a nutrient that brings strength to every part of our body, it is an important part of what binds each cell. The unflavored gelatin offers a source of collagen quite complete and much more accessible than commercial collagen (those sold to us from pharmaceutical laboratories).
Another of the main components of gelatin is **protein** which helps to build muscle mass and also has **amino acids** including an amino acid called **glycine** which helps to reduce stress, control blood sugar levels, reduce inflammation, improve sleep, in this link and on the web you can get a lot of information on this food that has many health benefits.
**Cinnamon** Cinnamon, in addition to its rich smell and flavor, provides this dessert with antioxidants, has anti-inflammatory properties, improves insulin sensitivity, improves circulation, strengthens the immune system, helps with stomach and digestion problems such as heartburn, nausea and gas, among other benefits.
**Cloves:** According to what I have read, they also have antioxidant, antimicrobial and analgesic properties that can relieve pain, can help improve digestion, control blood sugar levels, at the gym where I go the owner sometimes gives us cloves to chew and once she told us several of its many properties, other benefits is that it helps with bad breath and also toothaches or inflammation of the gums.
**Stevia:** This is a natural sweetener, which provides no calories, is a recommended alternative for people with diabetes or who want to take care of sugar consumption, is rather helps according to lower blood sugar levels, also helps lower blood pressure, contains antioxidants, has a mild diuretic effect and helps eliminate excess fluids and sodium in the body, helps strengthen the body's defenses and immune system.
All this information about the properties of each ingredient of this healthy gelatin I researched them reading a little, you can search each ingredient and its properties by Google or consult experts to verify and learn much more of each of these ingredients that make this gelatin is so beneficial to health.
