Happy Tuesday HIVE's beautiful people How is the most creative cooking community on the web 3? Today I come to share with you a recipe that was a challenge for creativity, all for the health of a super special birthday girl, my dear @ikigaidesign who is on a strict diet, but that should not be an impediment to celebrate her birthday with cake, even if it was a cake not at all usual.

The challenge was to make a cake that had no flour, or at least not the flour that hurts us, so I used coconut flour that I had on hand, I wanted to buy almond flour but I didn't have the budget and the other option was coconut flour which is also healthy and I had it available because I also try to eat healthy for health reasons. Health is a treasure that only when we look bad we value it.

I couldn't use sugar either, it's no secret how harmful this lady is for our health, but as the sweet touch was just and necessary, I prepared a healthy sweet concentrate with stevia leaves because I couldn't use honey or fruits such as cambur.
I cooked a 10 gram bag of stevia leaves with a cup of water, strained it and used half of the mixture for the cake and the other half I used for a healthy jelly that I made for my friend and that I will be sharing in a future post.

**The materials and quantities used were as follows:**
* 3 eggs.
* 6 tablespoons of coconut oil.
* 3 tablespoons of coconut flour.
* 2 tablespoons cocoa powder.
* 1 tablespoon of baking powder.
* Half cup of natural stevia concentrate.
**For drip:**
* 1 tablespoon cocoa.
* 2 tablespoons of coconut oil
* 1 teaspoon of honey (here I went a little bit out of the required amount but it was just a minimal touch to add a little bit of sweetness to the chocolate).

The first thing I did was to separate the egg whites from the egg yolks and in the bowl where I placed the yolks I placed all the materials except the egg whites, which I left to be beaten separately to stiff peaks to give air and fluffiness to the cake.
At first I thought that 3 tablespoons of coconut oil would be enough, but coconut flour is super absorbent and I ended up adding 6 tablespoons, but the result was a super soft, moist texture, quite pleasant to the palate and I'm sure that the amount of oil added a lot to this appetizing result.

After integrating all the materials and I had a fairly smooth mixture, not so dry! I began to beat the eggs until stiff and when they were super foamy I added the first mixture making wrapping movements so as not to lose the air and fluffiness.

Once I had my mixture ready, I added it in a mold buttered and floured with coconut flour, although the mold was made of silicone, it was better to make sure that it would take off easily, it was enough to experience the recipe to run the risk of it sticking to the mold hehehehehehe.

I took it to bake at a temperature of 170 °C and as it was quite thin it was ready super fast, in less than 30 minutes it was ready, the cooking time may vary from one oven to another, it is advisable to evaluate by inserting a toothpick after about 20 or 30 minutes, if it comes out dry is that it is ready.

After I took the cake out of the oven I let it cool for a while, while I began to prepare the healthy drip, with coconut oil, cocoa and a touch of honey, I told you the quantities at the beginning, and the preparation is simple, just mix everything well until it is integrated, the coconut oil has the particularity that as it cools it takes a thick consistency, I put it in the fridge for a few minutes so that it gets a little thicker at the time of bathing the cake, and then I also put the cake in the fridge to make it very hard.


Once I had the drip ready and with a slightly thick consistency I proceeded to bathe the cake with it and thus have ready a healthy cake for, ideal to treat yourself, calm anxiety or give birthday to that friend who is on a diet 👌 the texture I confess I loved it, although I feel it lacked a little more sweetness for my taste, but the birthday girl and the public present liked it and that's the important thing, it was quite fluffy even though the mixture was thin 🫣 I miscalculated the mold hehehe and it had a moist texture that felt super nice to eat, I would modify it by adding twice as much stevia and thus also helped to give more moisture to the coconut flour or maybe put a touch of honey to sweeten it a little more.
