Thursday morning I woke exhausted and aching, probably from doing so much on Wednesday. I got my post up, made something to eat and was back in bed by 8:30AM. I got up a couple hours later and tried to work on budget/bills, but that only lasted ½ hour. I went back to bed until about 11AM.
I finally got dressed and got the kitchen cleaned up. Then I started prepping the carrots for the zucchini fritters my helper friend and I were going to make.
I had a lot of carrots left from last year that I wanted to use up. The amount of them would determine the amount of zucchini because the recipe from @sunscape called for equal amounts.
My helper friend arrived at noon and he started grating the carrots and zucchini. I had to sit down to rest after setting up to cook the fritters.
When I came back to the kitchen I realized I didn’t have enough celery salt left so I made some from dehydrated celery and sea salt. (I think this was the first mistake…)
We mixed up batches using 2 cups of everything. I added celery salt and pepper and parsley plus the 4 eggs. We started off with the big fry pan but things were either sticking badly or burning. That batch of burnt went over the bank.
Next we tried the biggest cast iron pan. Same thing, over the bank. My old stove doesn’t heat evenly, and I finally remembered I had the induction burner. So we got that out and the big skillet just fit on it. But we got the same result, burnt and over the bank.
There seemed to be far too much liquid in the mix, so my helper friend took the remaining zucchini and squeezed out the liquid. I tried another batch on the big skillet, same result.
So I got a small skillet out, adjusted the amount of veg to egg and tried that and managed to get some that cooked but never crisped up. There was still at LOT of liquid in the mix. I suspect the celery salt is responsible… At least they didn’t burn. But I was so exhausted by then; I just cleaned up most of the mess, put the stuff in the fridge and went to rest. It was so hot and humid on Thursday I had to put the AC on in the office for relief.
I’d have to finish them on Friday morning when he returned. I’d made 12 fritters but they were soft, not crispy. I’m thinking of trying to cook them some more on Friday to see if I can get them crisp. We’ll see…
