When you think of comfort food, what comes to mind? A juicy burger and fries? A delicious ice cream? A warm soup? Or perhaps a dish that was prepared by your mother or grandmother when you were a child?
I imagine, however, that among all the heartwarming food options, not one of them contains a salad, right? Yes, because salads are basically crunchy, cold vegetables placed over a bowl with some kind of dressing. Do you see anything comforting in that? I imagine not...
However, salads can be that nice hug in the stomach. All you have to do is add the right ingredients and a little heat. To prove to you that there are salads that warm the soul, I prepared this post with one of my favorite salads.
Let's get to the kitchen?
Ingredients (2 people)
This salad mixes soft, crunchy ingredients and should be served warm. The softness of the white beans gives it that creamy aspect in the mouth that gives a whole coziness. The sautéed bell pepper also gives a very special smoked flavor.
To make this delicious salad you will need:
1 cup cooked white beans 1 small green bell pepper, chopped very small 1 zucchini, chopped into small pieces 1 thinly sliced red onion 12 cherry tomatoes, chopped black pepper salt olive oil
Directions
- First, chop all the ingredients.
- Reserve the red onion in a container with ice. This will make it less spicy, and will also prevent that famous onion puff
- In a frying pan add a dash of olive oil and then the zucchini chopped into small pieces. Sauté, season with salt and pepper, and then set aside.
- Next, in the same frying pan, saute the bell peppers.
- Okay, now it's time to prepare our salad! In a bowl put the cooked beans, the tomato, the zucchini, the bell pepper, and the onion. Mix well. Add salt and pepper if necessary.
Ready! Now just serve!
This is one of those super practical and quick recipes to make dinner when you're lazy. Besides being super nutritious, this salad is very cozy, since it is served warm. It's soft because of the beans, crunchy because of the bell peppers, and has a super special flavor!
