While anyone can make a regular omelet from normal eggs, I want to offer an alternative for those who prefer not to use non-vegetarian ingredients. I’m going to show you a recipe for a vegan omelet that is packed with protein. I am showing here one option the Vegan Omlett rich in protein. 20250304_145121.jpg Ingredients: 1/2 cup soaked split chickpea 1 tbsp rice flour 1 tbsp cornstarch 1/2 tsp black salt pinch of baking powder or baking soda. pinch of turmeric 1 spoon coriander 3 spring onion 1 green paprika 2 small green chilies 1 tomato 2 tsp oil 1 pinch of chili powder 1 tsp homemade tomato ketchup

20250304_145147.jpg As I mentioned some were in my previous recipe the chickpeas work like an egg substitute. I used that idea to form the eggy texture, smoothness, and fluffiness in the omelet. Wash and soak chana dal/split Chickpeas for around 4-5 hours.

20250304_165347.jpg Using a mixer grind the dal using 1 to 1.5 tbsp water. during making the paste add turmeric and 2 pinches of salt. and make a fine paste.

20250304_165904.jpg In the paste add 2 tsp rice flour and 2 tsp cornstarch. mix it well with paste.

20250304_150112.jpg Add two more tbsp water in the paste and flour. blend it for 1 more minute.

20250304_150149.jpg Here is a very nice, smooth, fluffy egg batter yes vegan egg batter ready. If you want to use it like this mix 2 pinches of black salt which has an eggy taste and smell. and make your plane egg omelet. I am showing some Indian special street food version. masala omelet.

20250304_150018.jpg Finely chop paprika, spring onion, coriander, and green chili.

20250304_170529.jpg In a bowl add spring onion, chili, paprika, and coriander. Add black salt according to your taste and mix it well. Add vegan egg batter around 8-10 tsp and mix it with vegetables. If you want add a pinch of baking soda optional. Stir batter until becomes fluffy

20250304_150705.jpg warm a pan on low heat( my regular gas stove is for reparation temporarily I am using an old stove which is just for emergencies.) and grease 1 tsp oil.

20250304_150818.jpg Pour the batter into the pan and spread it using a spoon.

cover and keep low heat. cook for 3-4 minutes on low heat.
