Hello, friends, food lovers, and community members! I hope you are all doing well and enjoying quality time with your loved ones. Last week, we celebrated a special Hindu religious day, and this month is filled with many special occasions. We refer to this month as Shravan, which has numerous ritual days.
Our beloved Lord Ganesh enjoys sweets made with coconut and jaggery, so I prepared this sweet offering. However, since I didn’t have fresh coconut available, I used a variety of nuts and seeds as substitutes. And had little Western chocolaty flavor.
Ingredients:
2 tbsp pumpkin seeds
2 tbsp sesame seeds
1 tbsp dried black currants
2 tbsp melon seeds
2 tbsp pistachios
1 tbsp dried rose petals, optional
2 blocks of coconut jaggery
2 tbsp cocoa powder
1/2 cup pitted dates
1/2 cup almonds
1/2 cup grated dried coconut
3 tbsp coconut oil
1 tsp vanilla
2 tbsp agave syrup.
Roast almonds until they are crunchy. After 2-3 minutes, remove to a bowl.
Remove seeds from dates,
Roast coconut, pumpkin seeds, sesame seeds, and melon seeds.
Placing them in a plate allowed them to cool down.
Chop the pistachios and keep them aside.
In a food processor, place those roasted almonds. Run the processor for a minute to grind the almonds
Add all seeds and date, and blend for 2 minutes until incorporated. Add 2 tbsp agave syrup to the mixture.
2 tbsp coconut oil and blend for 1 minute.
Make sure it's sticky enough.
Take a small portion of the mixture and press it using your hands and place it into the mold so it's easy to spread a layer of chocolate on the top.
Making chocolate syrup, I used coconut jaggery; 2 blocks are around 30 grams. using 2tbsp of water, melt the jaggery.
Strain it using a strainer.
Add cocoa powder to the jaggery water, and mix it well.
Mix the mixture well and add coconut oil to it.
vanilla extract,
Cook the mixture on low heat until thick syrup
Using an icing cone or a spoon, spread sufficient chocolate syrup on the top.
Sprinkle some chopped pistachios and rose petals on the top.
When all is done, keep the tray in the freezer until set
Remove the tray from the freezer and remove from the mold.
