Vegan Monday is bringing something new to my kitchen: my first-ever frozen dessert! It might sound unusual, but it's a vegan recipe for today.

Hello, friends, food lovers, and community! I hope you are enjoying quality time with your loved ones. This month is special in the Hindu calendar, and we're indulging in very satvik (pure) food. But it's not just about the food; our thoughts and behavior should also reflect a satvik lifestyle, which is simply another way to say vegan, which means not only avoiding animal products but also being kind to each other. not hurting someone with words or actions, directly or indirectly. This month is primarily dedicated to Lord Shiva, and there’s a special day devoted to him—Monday. We perform special rituals, and some choose to undertake strict fasting.

However, since my work schedule doesn't allow me to fast strictly, I try to keep it simple and easy. Today, I created this frozen dessert for Monday. I’m not quite sure what to call it, as it's a fusion dish I made for the first time. It requires very few ingredients and is quite simple to prepare.

Before I share the ingredients, I'd like to explain how I made milk from cantaloupe seeds.

I cut the melon into small pieces, washed and saved the seeds.

Using a mixer, ground them into a fine paste together with 100ml of water.
Strained the paste using a strainer.

Discarded the fibres, and I got 100 ml of melon seed milk. As first time I made I tasted it 1 tsp and it was really delicious

In the same mixer jar, I ground the melon pieces into a pulp.

And now I have my ingredients:

1 cup Cantaloupe pulp/puree
100 ml melon milk
1/2 cup coconut milk
1/2 cup sugar, the melon wasn't sweet enough.
4 strawberries
1 tsp vanilla.
mint leaves and black currant from the garden

In melon milk, I added vanilla sugar and coconut milk.
and then melon pulp

Using a whisk mixed it gently

After the mixture was well incorporated, I mixed in some strawberry pieces

Poured into the recycled ice cream box.Covered and kept in the freezer.

After the mixture had become mostly frozen, I took it out and stirred it using a spoon. I repeated this process three times to keep it from getting big ice crystals.

When the mixture had become firm, I took it out and scooped it into bowls.

Used some pieces of strawberry, black currants, and fresh mint leaves on top to decorate.
My husband suggests the name cantaloupe sherbet. What do you think?
