

Greetings friends, food lovers, and community.
At present I am in New Hampshire visiting my brother-in-law, who is sick and we came here for help him. He was a sporty strong man. But now because of his sickness he is so weak and having lots of medication he lost of his appetite, his taste, and as alone(he was living alone and always busy at work) he is more tired to take care of himself.
Today I planned to make some nice food for dinner but as he lives alone he has very simple kitchen and very few choices for me to make a dinner. what ever I found in his kitchen I made todays dinner. for emergency he had lots of storage in his pantry. there I found some pinto beans. which mostly known as Mexican beans I never been made or eaten them.
So I made some fusion from this beans with available ingredients.
Ingredients
2 cups of pinto beans soaked overnight.
1 big tomato
1 big white onion
1 tsp minced garlic
2 cm fresh ginger
1 tsp American curry powder.
2 tsp olive oil
1 tsp salt
1/2 tsp turmeric
1/2 cup marinara pasta sauce
Washed and soaked pinto beans overnight.
I drained the water and added new water more then 1 liter.
then turmeric and salt and cooked them until soft.it took time.
If it is in my kitchen I could have used my pressure cooker to done it faster.
Chopped onion , tomato, grated ginger.
In a pan poured 2 tsp olive oil.
then Minced garlic

Grated ginger stirred them well until onion became golden coloured.
Added chopped tomato
Curry powder
stirred well.
Added marinara pasta sauce (I couldn't find any tomato paste or puree)
Stirred well and added cooked beans to it.
Cooked for around 3-4 minutes and it was done.
To make rice Ingredients:
I was planning to make asparagus rice but I changed my mind.
1.5 cups of basmati rice
10-15 stalks of asparagus
1 tsp salt
1 tsp Indian curry powder
2 tsp olive oil
1 tsp salt
1/2 green bell pepper chopped
1/2 cup chopped carrot
1/2 cup chopped green beans
1/2 cup chopped asparagus stalk
2 cups of water from fibrous part of asparagus stalk + 2 cups normal water.
Cooked and ground asparagus stalk The fibrous ends and strained and saved that water to use in rice.
Washed and soaked rice for 10 minutes.
In a pan added 2 tsp olive oil.
Then Chopped vegetables
Stirred them well
Added rice
Added curry powder
then salt
stirred all well
and water from asparagus stalks.
And 2 cups water. covered and cooked until rice cooked.
and it has been done.
Cooked leftover asparagus stalks
Served rice and beans with avocado, cherry tomatoes, and cooked asparagus.
