Our Mondays are always vegan and each time I shift the menu for breakfast lunch or dinner. Today I tried a new breakfast and even our routine chai with tender coconut milk.
Hello, vegan lovers and friends today I would like to share a breakfast recipe That is gluten-free and vegan. Simple and healthy.
Ingredients:
1 cup soaked moong dal split green lentils
1 cup finely chopped cabbage
1 green chili
2 cm ginger
4 slices of white onion
1 tbsp finely chopped coriander
1 tsp cumin seeds1/2 tsp turmeric
1/2 tsp salt
Here is the moong dal which was cleaned and washed
I soaked it for 4-5 hours and discarded water.
I put it in a mixer jar along with chili, onion slices, and ginger.
Added 1/2 cup chopped cabbage.
Grind it in coarse paste.
Added coriander into a mixer and mixed it
Poured mixture in the bowl that has remaining 1/2 cup chopped cabbage.
Mixed it well using a spoon.
Added cumin, turmeric, and salt and mixed it very well.
Brushed/greased idli mold (Can use metal cups or steamer with small molds.) using coconut oil.
Filled mold with sufficient batter.
Covered and cooked them for around 5-6 minutes in a steamer/cooker.
Here they are nicely cooked, can check using a knife or toothpick teste. Cooled them and removed them using a spoon/spatula.
Making chutney ingredients: 1/4 coconut 1 small piece of chili 2 garlic cloves 3-4 sprigs coriander 1/4 tsp salt 2 tsp lime juice.
Put all ingredients in a mixer jar squeeze 2 tsp lime juice into it and grind a very fine paste.
