The first time we got Chicken of the woods mushrooms I made kathi wraps.

Hello, friends, food lovers, and community greetings! We are mushroom hunters and find many different mushrooms, but only pick those that we are confirm they are edible. we have been foraging for different mushrooms for many years, but never found a sufficient amount of this one called chicken of the woods. One day, my husband was out walking alone because I was busy at work. When I came home, these huge mushrooms were on the table, which surprised me. My husband found them in the nearby forest. That day I was tired, so I just cleaned them and made some appropriate pieces and filled the containers, some went in the freezer. though I saved one to prepare this recipe.

$1 Here is how I made these, my version of Kathi rolls or wraps. (popular in the eastern part of India using mostly chicken but i am using chicken of the woods mushrooms)

$1 First, I cleaned and cut the mushrooms into thin slices, discarding any parts that seemed too tough.

Step 1 Ingredients and marinating mushrooms: $1

400 grams sliced Chicken of the Woods mushrooms 1 tsp ginger-garlic paste 2 tsp tandoori masala 1 tsp salt 1 tsp oil 1 tsp tomato puree 2 tbsp corn starch 1 tsp lime juice

$1 In a bowl, I mixed tandoori masala, salt, ginger, garlic, tomato puree, lemon juice, oil, and corn starch using a spoonful of water to make the marinating paste.

$1 Mixed the paste with mushrooms and coated them evenly. Covered and kept them aside.

Step 2: Spice mixture. $1 1 tsp garam masala 1 tsp chili powder 1 tsp turmeric 1 tsp curry leaves powder 1 pea-sized hing asafoetida. 1 tsp normal salt 1/2 tsp black salt Mixed all together using a blender. kept it aside.

Step 3: Prepare vegetables $1Cleaned and sliced vegetables, I used the noodles slicer and made nice, thin slices 1 carrot 1 onion 1/4 cucumber 2-3 red cabbage leaves 2 regular cabbage leaves 1 tomato Sprinkled with a pinch of salt and pepper.Kept aside.

Step 4 Cooking the mushrooms $1 In a warm skillet, I poured a tbsp of oil and placed the marinated mushrooms. stirred them well, and when I saw they were becoming dry, I poured some water into them. covered and cooked until they became softer, but they were chewy like meat. Step 5: Making rolls $1 Here I have homemade thin chapatis, or you can use tortillas. Fried mushrooms Vegan mayonnaise Vegetable slices/strips and spice mix

$1 First, spread a spoonful of mayonnaise on the chapati Sprinkled the spice mixture, ca. 1/4 tsp, you use according to your taste.
Then placed some mushroom pieces and then plenty of vegetables,

$1 Rolled them carefully. and wrapped with baking paper.

$1 After wrapping i added more mushrooms and mayonnaise on top. You can use any sauce or dressing you prefer.
