Hello, friends, vegan lovers and community greetings and happy world vegan day. As I wrote in my last post it is little unfamiliar kitchen here in my brother-in-laws kitchen. But I am trying my best to make good real food for us and him. James my brother-in-laws is sick with big health issue and he wanted to eat some of his favorite foods these last days he asked me for make a cinnamon bread but instead of that I made our traditional cinnamon rolls. that we called in Norway kanelsnurrer. the real version is made with some dairy ingredients but I tried them with all vegan ingredients and they turned very delicious and perfect. Ingredients:
1 cup of almond milk
1/3 cup of sugar
1/2 cup of avocado oil
2 tbsp cinnamon powder
1 sachet/1 tbsp of dry yeast
1 tsp salt
3 cups of white flour.
1/4 cup of water or extra any vegan milk
Poured 1 cup of almond milk in a mixing bowl.
Added sugar
Then yeast mixed well and waited for 5 minutes, and added flour.
Poured oil in the all ingredients in the mixing bowl. saving 1 tbsp oil.
Added salt
I felt the dough was a little dry so I added 1tbsp water
Dough is mixed.
To make smooth dough I used saved oil and 1 tbsp extra water alternatively to work with it to make a smooth texture.
The dough is done.
Placed in the bowl and covered with plastic film and kept around 6 hours to rise.
2 tbsp cinnamon powder
3 tbsp sugar mixed in a plate.
Gradually pouring oil.
Made sticky mixture.
The dough rose nicely.
No rolling pin I had used my hands to spread it to a little less than 1 c.
The texture was very good so it worked without a rolling pin.
Spread cinnamon sugar mixture on the flattened sheet.
Again I used little oil to sprinkle on the cinnamon mixture and made it evenly spread.

rolling from one side carefully into a roll.

No brush using hand to grease the tray

using knife cut the roll in slices.
Placed all slices of dough roll in the greased tray. Covered them with film and kept for 1/2 an hour to rise up

I checked it after 1/2 hour and they looks like this.
Turned oven on at 370 F preheated 8 minutes and placed the rolls in the oven. Baked about 22 minutes.
Here is final result.
Carefully separated them.

Nice and soft texture and delicious. Everybody was happy and me too.
Thank you.
