It is my dinner today, made with some leftover rice and last time's leftover Protein chunks.

Ingredients:
17-18 protein chunks/tikkies.that I shallow-fried using 1 tbsp of cooking oil.
1 onion
2 tbsp oil
12 cherry tomatoes
4 garlic cloves
1/2 cup thick coconut cream.
1 tsp garam masala
1 tsp coriander powder
1 tsp black masala
1/2 tsp cumin powder
1 tsp salt
1/2 tsp turmeric
1 tbsp tomato paste.

See what happened when the temperature dropped to 3C. I have to struggle getting the coconut milk out of the package.
I chopped onion and garlic, and after heating a skillet, poured 1 tbsp of oil into it.
Added chopped onion and garlic to it, stirred it until golden brown.
Added cherry tomato halves and stirred well.
Then added all spices and stirred.
Added some water to avoid the spice get burning.

Then added tomato paste.
Once the mixture began to release its aroma, I added all the protein chunks or tikkies. I stirred them very gently and carefully to avoid breaking the chunks. After they were nicely coated, I added 1/2 cup of water, stirred it nicely, covered the pot, and cooked it on medium heat for 3-4 minutes. They were ready to serve.
Garnished with fresh coriander.
Yesterday's leftover rice I put in the fridge, and it became hard. To make it soften, I added 2 tbsp of water to it and just warmed it on low heat until it became soft. (It was around 1 and a half cups of rice)
1.5 cups of cooked rice.
Then I used these ingredients to make nice soft roties.
2 leftover cooked potatoes
2 tbsp gram flour
2 tbsp rice flour
1/4 green chili
1 tbsp fresh coriander
1/2 finely chopped onion
1 tsp salt, and a pinch of turmeric (optional)
mixed all ingredients, rice flour, gram flour, onion, chili, coriander, and rice.
Then added potatoes, grating them using a grater.
Mixed all ingredients thoroughly using a hand.
The dough looked like this without adding any liquid.
On the baking paper, greased with some oil
Took an appropriate amount of dough, flatten it into a round, 2-3 mm thick.

Carefully placed it in a skillet/frying pan. After a minute, flipped it on the other side and brushed a few drops of oil.
Flipped it one more time when I saw those brown spots on the surface, and I removed it from the skillet. Repeated the same procedure for all roties.

Simple salad: cherry tomatoes, cucumber, paprika, artichoke, red cabbage, and regular cabbage, using a dressing mixture of olive oil, mustard, vinegar, salt, pepper, and sugar.
