Sobre la plancha caliente, varias cachapas dorándose. Estas no son otras que las famosas tortillas de maíz jojoto, ese maíz tierno que, recién germinado, esconde el verdadero secreto de su sabor. Un toque de leche, azúcar, sal o papelón terminan de nutrir esta joya culinaria, aunque cada familia guarda su propia receta patrimonial. En esta "cachapera", ofrecen el manjar humeante directo de la plancha, acompañado, si uno lo desea, de cerdo frito. > After walking about three blocks, I finally find my seat. The air is permeated with the unmistakable aroma of corn. On the hot griddle, several cachapas are browning. These are none other than the famous jojoto corn tortillas, that tender corn that, freshly sprouted, hides the true secret of its flavour. A touch of milk, sugar, salt, oror paprika finish off this culinary jewel, although each family has its own traditional recipe. In this "cachapera", they offer the steaming delicacy straight from the griddle, accompanied, if you wish, by fried pork. --- --- --- Me cautiva ver cómo, en este rincón de la Amazonía brasileña, la cultura culinaria venezolana se mantiene intacta. No se ha tergiversado, ni aquí, ni en Miami, Madrid, Tenerife, o en cualquier otro lugar del mundo. La cachapa con queso de mano se promueve con orgullo, y eso, para mi alma venezolana, es sentir una hermosa migaja venezolana, el gentilicio en su máxima expresión. La cachapa de maíz es, sin duda, un manjar emblemático y tradicionalmente venezolano. ¡Qué gran placer es poder comer lo que uno más desea! > It captivates me to see how, in this corner of the Brazilian Amazon, Venezuelan culinary culture remains intact.
