Recently I celebrated my birthday at the Fernhill Hotel in the Kwa-Zulu Natal Midlands. Fernhill is not only a hotel, but a training school for chefs and youngsters wanting to train in the hotel management side of the industry. I ordered the Tropical Pavlova for dessert. Imagine my surprise when it arrived at the table looking anything but a regular pavlova. The surprises kept coming! When I opened the the 'lid'. not only was there delicately cut fruit, but the most delicious fruity icecream. It was a thing of beauty and tasted magnificent.
