As what I shared in my previous blog, I'm fond of cooking dishes and now I want to share a recipe of escabeche. We rarely ate this, and every time my mom cooked this dish it made me happy. We often cook it on New years Eve, and Christmas.
First, prepare the ingredients as usual, and cut the carrots into thin pieces. My favorite in escabeche food was these carrots and the fish.
Also, cut this ginger and make it different from carrots since there was a possibility you would eat this. It's bitter and I usually eat this since this would be covered with the sauce and it looks like a carrot.
Also cut this aromatics, (onion) and (garlic) it made the dishes more tasty.
First step, sauté the aromatics until it looks like the color brown so the smell of this and the taste would stick to the food. Add the ginger on the pan after you sauté the aromatics. Stir it until the smell of the ginger comes out.
Then, add follow the carrots since it would take a while until it will smoothen. Add water on it so it will soften faster, leave it for a while.
When you cook a escabeche makes sure to fry your fish first. So it would just be easy for you. When the carrots get softened, add the fish in it.
This was the condiments that I used for this dish, after I put the fish. I then add the soy sauce. Stir it until the soy sauce occupies all the space so the taste would just be even. Add salt, and a magic sarap. Also if you have a mama sitas soy sauce it would be better.
Add a ketchup on it to make it more tasty, this would be important ingredients in cooking escabeche.
