# Blueberry Banana Oatmeal pancakes Prep time: 5 mins Cooking time: 20 mins Yield: 6 Pancakes
Ingredients
3/4 Cup instant oats (finely grind) Pinch of salt 1 teaspoon Baking powder 1 Banana 1 Egg 1 Teaspoon vanilla (any type) 1/3 Cup buttermilk or any type of milk 1 Tablespoon Butter or vegetable oil 1/4 cup Blueberry 1 tablespoon Sugar or to taste
Instructions
- Finely grind the oats with a food processor, add to it salt and baking powder.
- In a medium bowl mash the banana with a fork and whisk the egg with a fork. Add the egg to the mashed banana. Whisk together. Add buttermilk, butter and give the mixture a quick mix. Add oats, sugar and mix all together until all well combined.
- Add blueberries to the oats batter. Give it a quick mix to distribute the blueberries.
- In a hot pan, on a medium heat, pour 1/4 cup of the pancakes batter. Cook until golden on both sides.
- Serve with maple syrup and fruits. Enjoy!
