Making yam porridge with ugba(African oil bean)

Hello Vegan family, trust the mid week is as fruitful as we hoped it would be. We are grateful for life and having different types of food we could eat and actually enjoy.

I want to share a porridge recipe I made with yams and ugba also known as African oil bean and some other ingredients.



Ugba(African oil bean)

I have come to love the African oil bean and it gives some meals a peculiar and delicious taste when added to it. It is also known for its unique flavor and benefits. They are a good source of protein, healthy fats and essential nutrients like calcium, magnesium and potassium.


To make the porridge, here are the ingredients used
• 1 tuber of yam

• A small plate of ugba

• 2 medium sized onions

•1 gram of scotch bonnet peppers

• 4 cooking spoon of palm oil

• Some pumpkin and scent leaves

• 1 table spoon of salt

• 3 seasoning cubes


Preparation

Cut and peel the yams. Cut the peeled yams into small chunks, wash and put on fire after adding some salt and onions. Leave to cook for 15 mins

Wash and blend the peppers

Chop the onions

Wash the ugba (African oil bean)

Pick and chop the pumpkin and scent leaves.

Pour 3 cooking spoon of palm oil and add some onions in another pot

Put in the blended peppers and let it saute for a 5-8 mins then put in the salt and one seasoning cube

Add the ugba and stir. Leave to cook for another 3 minutes

Check the yams to see if they are soft enough, mash some of the yams

Add the pepper and ugba sauce into the pot of yam and stir. Adjust taste by adding salt and one more seasoning cube. Let it cooks for 3-5 mins

Add the chopped pumpkin and scent leaves and leave it for 1 minute and its ready to eat.
