I got this green leafy vegetable with a baby pumpkin in it as an gift by my mum from the village. It's rainy season these days and if you have heard about Himachal recently, the condition is not a very good, most of the roads are a broken and many people have lost their lives cause of the cloudburst and landslides. Areas such as Chamba, Manali, Kullu and Mandi are at high risk so it's better to avoid visiting these place for a month atleast. Coming specifically to the point, these days it's raining heavily and its good for the vegetation and new growth and over a phone call my mom said that's we have lots of a green vegetable here at Jubbal in India so I am sending you some prepared it ASAP.

The vegetable is fresh and it has the warmth of the sun and the nutrients from the soil along with the goodness of rain in Himalayas.

Eating green vegetable is indispensable, good for your overall health. I have a eaten lots of green leafy vegetable during my childhood but I was ambiguous about its benefit. And now as I am aware I want you all to buy it on your regular basis and don't be stingy.

Ingredients

1 kg Green leafy vegetable 1 tps coriander powder Salt according to taste 3 Tps Oil 2 tps turmeric

Procedure

As I mentioned, it's a bed of thorns for some cause you need to separate the green vegetable very carefully and you also have to chop it ends. You need to separate each leave and wash it carefully.

Now the most difficult step according to me is to chop it fine, it's time consuming process for me if you have the chopping tool then it's easy.

This is the final amount of vegetable that we are going to prepare. Quantity remain half by chopping it fine and separating the stems.

Here are some stems that I have separated you can use them to prepare some soup if you know how to. I really don't know how to prepare it so I am wasting it this time but I'll make sure to learn it so that nothing goes waste.

Also I had this baby pumpkin which I decided to make together, it was so soft of that there was no need to peel it off.

It looks mouth watering, isn't it? Mix it well and let it rest for 5 minutes at least. Cover it with lid. You can also add red chilli powder if you love it but I am skipping it, was I think it's harmful and do let me know about your opinions in the comments.

After 5 minutes it will turn soft and now we have to add the chopped vegetable in it. Look how pretty it looks.

Now it's time to cover it well and lead it cook for 10 minutes. This is enough for two.
