Wooooo, that's a good question... That's how I see spices, they are a real kind of cooking; it's unthinkable for me not to get a spice shop, spice market, specialty store, or bulk spice store, well, I love them and visit once a week. They are vibrant places with high ranges of spices and also nuts, besides every time I visit these stores I see reflects the complexity of human societies, their culture and history of how they came to our stoves to give flavor and aromas, which makes food more interesting, just like we people who bring unique qualities that enrich those around us. >I personally identify with all spices, but if I had to choose one it would be cardamom, a species that brings a citrus, spicy, floral flavor that completely elevates the experience, because it is enigmatic, complicated and does not go to everything. That's who I am. I'm going to share you today @elizabethbit, the most loving dessert, is a sweet that embraces your soul, I learned to make it with my mom, it is creamy, soft, subtle, delicious that immediately transports us to our childhood and to those flavors, smells of home, with that touch of affection that makes it unique, with the soft and pearly rice that cooks slowly until it absorbs all the milk and spices, the smell of cinnamon and cloves, the zest of the orange, are the first aromas that catch us with my secret touch, half a teaspoon of ground cardamom, the taste of this dessert is a trip to the senses, when the subtle color of spices with orange zest appears...yummm Ingredients: 2 cup of white rice, 1 cup of water, 3 cups of whole milk, 1 can of evaporated milk for more creaminess, 1/2 teaspoon of ground cardamom or use 2 pods of this spice. 1 strip of orange peel without the white 2 cinnamon stick, 1 1/2 can of condensed milk, 1 teaspoon of vanilla, 1 pinch of salt. The cooking is very simple all the liquids (evaporated milk) water are mixed in a pot with the spices, the strip of the orange peel and put to boil over medium heat with the rice, and when the rice is almost creamy and cooked the condensed milk, vanilla and pinch of salt are added, and cook until the rice is well cooked and creamy I like cooking with spices, I think it's the best way to take the monotony out of meals, I'm also very active, functional, and I live life with joy, in fact, I put a pinch of salt to coffee to round off the flavor...
