Hi everyone, I'm writing from a busy kitchen in Cape Town, South Africa.
Its birthday season in my family this month and I've been working on this recipe for my moms birthday. I love the simplicity and ease of these vanilla cupcake.
Vanilla Cupcakes: 12 portions Ingredients 150 g self raising flour (1 + ¾ cup) 150 g caster sugar (¾ cup) ½ tsp baking powder A pinch of salt 150 g butter, softened (¾ cup) 3 eggs large ½ tsp vanilla extract
Vanilla pastel icing 500 g icing sugar (2 cups) 500 g salted butter (⅔ cup) a few drops of vanilla extract A drop Food colouring
Vanilla cupcakes Method Pre heat the oven to 170c° Sift together all of the dry ingredients in a bowl Add the butter and vanilla extract and lightly mix Add the eggs one at a time until a soft batter forms Full the 12 cupcake liners and place in the oven for 12-15 minutes or until a knife pulls out clean from the centre of the cupcakes.
Allow to cool before icing
Icing method Soften the butter and mix until it becomes light Sieve the icing sugar before adding it to the butter and mixing. Fold in the vanilla essence Divide the icing up in to separate bowls before adding the food colouring and mix to make the colours you desire. Full your pipping bags and have fun decorating
To decorate I've added fondant flowers, candy pearls These are the perfect for sharing and celebrating with.
