This dish serves as a poignant reminder of my beloved grandmother, who sadly passed away amidst the challenges of the pandemic in 2021. She played a pivotal role in my upbringing, acting as both a mother and father figure while raising my sister and me. Every time I prepare adobo, I dedicate it to her memory, striving to infuse each dish with love and sincerity. Though I may not be a master chef, I firmly believe that cooking from the heart transcends culinary skill. After all, everyone possesses a palate capable of discerning what truly tastes good, and cooking, at its core, is an art accessible to all.
