Holla friends. I trust you had a splendid day. It's the time of the year when we get to enjoy fresh okra prepared in various ways. My husband likes okra and wouldn't mind having it almost everyday, to make sure I don't get tired of it, I learned to use different methods, which makes me crave for it each time.
The method I applied in this particular recipe is stir frying the okra lightly with fresh pepper, tomatoes, and lots of onions. I actually used about 12 medium onion bulbs, hence the delicious onion flavor derived.
INGREDIENTS ● 1kg okra ● 12 medium onions ● 2 teaspoon salt ● 250g pepper and tomato ● 1 tablespoon soy sauce ● 3 cooking spoon palm oil ● 500g pumpkin leaves
STEP 1 Wash all vegetables and soak with salt for a few minutes to kill germs. Rinse off with clean water and chop okra. I used my process to make it fast and easy.
I did the same with the leaf. You have to be careful while chopping the leaves so it's not too smooth. Speed 1 is best for vegetables.
STEP 2 Prepare onions, pepper, and tomatoes. Wash them and place them in the processor to dice.
STEP 3 Now get a pot for the soup and place on fire. Add the palm oil when it's hot and the chopped pepper mix. Allow to fry and stir continuously for 3 to 5 minutes.
Add the okra and stir well to ensure the pepper mix is incorporated with the okra. Extra energy is needed to stir at this point because of the thickness and slimy nature of the okra.
Add soy sauce after 5 minutes and stir.
STEP 4 Add the pumpkin leaves and stir. Taste at this point to adjust salt, pepper, or spices. Add more chopped onions, allow to cook for 2 minutes, and turn off heat. We want the end result to be green and crunchy.
That's the process I used to get my delicious, onion flavor, crunchy okra. It was very different from other okra I've prepared. Anyone who tasted it wanted more. The meal was achieved with just a few major ingredients, but it turned out really delicious. 😋
