Hello friends. Welcome to my blog and the last day in October. I thought to end my October with this delicious beef soup recipe known as egusi in my country. Egusi is gotten from a type of melon. When the seeds are taken out, they are dried and used for soup and sauces. It's popular in most African countries, and the egusi seed is healthy as it contains natural oils and is rich in vitamins.

Ingredients • 1.5kg beef • 1 Stockfish • 2 cowskin • 4 onions • 3 seasoning cube • 2 tablespoons of salt • 3 cooking spoon oil • 250g dried cat fish •1 medium iced fish • 100g crayfish • sliced pumpkin leaf • 500g egusi • 1 satchet chilli pepper

Cooking Procedure
Step 1 First is to thoroughly wash meat, season well, add onions, spices, salt, and cook for 15 minutes on medium heat.
Add iced fish and cow skin and cook for an additional 5 minutes, and then add the washed dried fish and turn off the heat.

Step 2 Wash the egusi and remove the peels and dirt. Put in a blender with onions and pepper and blend until very smooth.

Step 3 Slice two onions and add in a pot of hot oil. Allow to fry well and add the blended egusi mix. Allow to fry well and stir continuously to avoid burning.

When egusi is well fried and looks dry, add the precooked proteins and stir well.
Step 4 Allow egusi to cook well. After about 15 minutes, add washed and sliced pumpkin leaves into the egusi soup, stir and turn off fire. The soup is ready.

Our egusi soup is ready, and it is easy to prepare with these easy preparation steps. I love the flavor the beef gave to the soup. I decided to buy beef because I've been eating just fish and chicken for a while now. I thought to get a different taste of the soup by using beef as the main protein, and it came out very delicious. 😋








We enjoyed the soup with smooth and soft semo swallow. It's a perfect combination of soup and swallow.
