A lazy day comfort meal: easy stir-fry noodles ๐Ÿœ

"Khadi have you realised Indomie (noodles) taste much better when cooked in very small quantities and not otherwise"A friend once said to me. I reflected and to some extent she made a point ๐Ÿ˜‚, let me get straight to business,Today I'm sharing my quick and easy stir fry noodles; the perfect dish for those days when you are tired hungry and really not in the mood to cook something complicated. Trust me this recipe is fast affordable and seriously satisfying. I love to cook but sometimes I can get very lazy at it ๐Ÿ˜‚. Today was one on those lazy days so this is what I had for lunch. Let's get into it.

What you would need

โ€ข A pack of indomie noodles (70g) or any instant noodles you like โ€ข An egg ๐Ÿฅš โ€ข Half carrot ๐Ÿฅ• โ€ข 1 green pepper ๐Ÿซ‘ โ€ข 1 small onion ๐Ÿง… โ€ข Groundnut oil (or any cooking oil you prefer) โ€ข The spice packets that come with the noodles.

Step 1: prep your veggies

First, I washed all my vegetables thoroughly. I cut the carrot into thin slices as well as the green pepper and the onions to using my orange grater( I don't actually know the exact name but it does the job). You don't need perfect cuts just keep everything bite-sized and even so it's cooks nicely

Step 2: Mix the egg & Veggies

I cracked the egg into a small cup added some of the sliced carrots green pepper and onion and gave it a good stir. You can add more, little or no veges if you prefer it that way. To make it even tastier I sprinkled in a little of the noodles seasoning and mixed it well.

Step 3: Fry the egg mixture

I placed my frying pan on medium heat added a bit of groundnut oil just enough to fry the egg and poured in the egg-veggie mix. I let it fry until it was firm and slightly golden ( flipped it to fry both sides ) then I put it aside on a plate.

Step 4: Cook the noodles

Using the same pan, I pooured a small amount of water just enough to cook the noodles without making them soggy. I wanted my stir fry to be dry not watery. I left the noodles to cook for 2-3 minutes.( You can drain any extra water if you put too much, ideally use 200mls of water).

Step 5: Bring it all together

I added the remaining noodles spices the oil seasoning and stirred everything for about minute, then I followed up with the vegetables I sliced earlier and stirred for another 4 to 5 minutes until well combined ( you may add oil if oil seasoning isn't enough).

Serve and Enjoy

And that's it I served my noodles with the fried egg on the side I love it tell you it was so delicious. The whole process took me about 20 minutes from start to finish including prepping the veggies.
